If I’m an F-1 student and am almost ending my 1 year post-completion OPT, will my F-1 status still be valid if I go back to school after my expiration date?
And how soon will I have to go back to school? My OPT expiration date is in 4 months.

As long as you are enrolled in a course of study that is eligbile for F-1, you will continue to be in F-1 status but you will need to get a new I-20 from your school. It is best not to have any gaps so if your OPT expires, you should make sure that you have a new I-20 starting for the date that the OPT expires.
