can we change our mids about a contract signed for costs of building a new house?

We signed the contract in the office after initial discussion, but on reflection realise it
is further from the initial suggested cost than we realised. Is there any way we can
go backwards on this?

No, unfortunately, you cannot change your minds about this, so long as the contractor did not commit fraud (i.e. did not lie to you about something material, or important). Otherwise, there is no grace or "recission" period for a contract like this; it is binding on signature.
