Can I sue a business that used my debit card number to make a payment on my account?
I was not set up for auto pay and did not give verbal or written consent for them to use my card like that. In fact I have messages from the lady that did it stating what she did. When I called about it she made a weird excuse and put my money back but left me with sever trust issues with that company.

You can't recover compensation for trust issues. If they made a mistake, even a stupid or inexcusable one, but corrected the problem by returning all your money, in the eyes of the law, you have not been injured and would not be able to recover compensation.
