Would I be legally liable if I were to leave my employer without having had a chance to document all of the technical details of my job despite my employer asking me for it?

I work for a business as a software developer. I have a lot of critical information about the ins and outs of the technical infrastructure of the service the company provides but I have not had the time to fully document everything given the rapid pace at which we work.

No, you would not be legally liable unless you had signed some written contract in which you had agreed to do this. In the absence of a written contract, all employment is employment at will which, among other things, means that an employee may quit or resign at any time, without notice, without any liability for having done so or for having left tasks undone or undocumented.
