When purchasing a home from a family can a fiance be added to a contract

My fiance is taking over the payments on his
grandmother’s house him and I are and to write
up a contract can my name be added to that
contract or is it only legal for his name to be
added to that contract because we’re not
married yet

There is no legal requirement that only family members can contract to buy a home from one person's family member: that is, he can buy the home with whomever he wants, fiance, girfriend, non-romantic friend, business partner, etc. All that is necessary is that all parties to the contract (e.g. you, him, and his grandmother) all agree to enter into it with you on it.
