What options do I have, if any, if I bought a house a month ago that has a septic system, but all our paperwork says public sewer and we were never told about the septic system?

If the septic system is working fine you really do not have much of an option unless you can get an appraiser to say that the unit is worth less than what you paid for it with a septic system than with a sewer hook up.

If there is a differential under the above scenario that may be your measure of damages. Ordinarily I prefer septic over sewer because you do not get charged a monthly fee for sewage with a septic system in place as a property owner.
