The only way to get money that someone owes you, including what an employer owes you for bounced paychecks, is to sue them in court. You could also sue for any costs/expenses directly caused by the checks bouncing, such as bounced check fees. Of course, if the reason the checks bounced is that the company is an LLC or corporation and has no money, has gone out of business, or been dissolved, then even if you win, you will likely not recover anything--you can't get money where there is none, even with a court order or judgment. If the company was not an LLC or corporation, you could sue the owners personally, but again, will not get anything if they are involvent don't have money or file for bankruptcy protection.
