We are a manufacturing plant of 49 employees and do not have a dress code.

It is legal for you to ask the employee that has a different than usual hair style to wear a baseball cap at the trade show to cover up his hair style but I recommend that you do not ask him to do so. The reason is that if he is qualified to represent your company at the trade show, then who cares about his hair style?

Most likely his "mohawk" hair cut will have people remember him and your company even more.
