What information can a booth owner ask from a booth renter?
My wife is a hair dresser; she does not own the business. She rents a spot from the person who owns the business. She is now asking for her SSN and driver’s license number. I am uncomforatble with is. Is there a valid reason for this?

The booth owner can ask for whatever information they deem necessary to run their business. Many will ask for information to either run criminal history backgrounds (to make sure bad people are not running other businesses on their property). Some just need the social to be able to identify vendors for tax purposes. Other owner's have insurance policies on their property and the insurance company requires the information for coverage purposes.
Your wife has a couple of options for dealing with the situation. She can get a Tax ID number associated with her business so that you doesn't have to use her personal social security number. She can talk to the booth owner and explain her discomfort and see if they will waive the requirement. Or, if the booth owner refuses to waive the requirement, then she may just have to decline renting a booth from this owner.
