If my employee handbook states that it’s up to the employee to take up to a hour for lunch, do I have a case if I’m fired for taking that hour?

Arizona is an at-will employment state, which means you can be fired for virtually any reason except a discriminatory one.  You can, however, collect unemployment if you are let go for such a silly reason.
