My Dad predeceased his parents, is there anything we can do as his heirs if my Dad is not listed in their will?

So my Dad predeceased his parents, and they did not list him in either of their
wills. As my Dad’s heirs is there anything we can do to fight that decision?

Not really unless you can prove that your grandparents were somehow unduly influenced, coherced, etc. by another beneficiary to leave your father out of their Will. Otherwise, an adult child can be disinherited by their parents.
