Employment at will (which is the employee in this question appears to be) can be fired for good bad or no reason at all. When you go for a job interview and the employer tells you the job description, you have the choice to bargain for your employment or not take the job. By accepting the job, you agree to perform the job as your employer asks. If you do not like it, you can quit. Assuming the person is not a child (which would violate child labor laws), or a Union contract that has regulations regarding standing for long hours, there is nothing one can really do in this situation other than negotiate with the boss or quit.
