Yes, reading or intercepting another person's texts (or emails, for that matter) without that person's permission would be a violation of wire tapping law and could expose that person to criminal liability.
Deleting an i-cloud back up is also illegal: at a minimum, it would be form of vandalism or willful destruction of another person's property; it may also be identify theft, if the hacker had to pretend to be another (sign in as another) to do this.
