Is a new homebuilder required to keep original purchase offer or can they destroy after “processing into their system”

Arguing with builder over them removing bath options from original purchase offer. I was told all paperwork would be mailed to me but that never happened. Now they can’t produce original paperwork

I am so sorry for your situation.  What you are having here is a contract dispute and the problem is that you do not have a copy of the executed agreement and they claim they do not either (which I highly doubt).  I would speak with an attorney in your area on the matter. You are going to have to figure out how to "prove" the contract and the extras you claim that you purchased.  It may not be as difficult as it sounds but some one needs to deal with them directly on your behalf.  Good luck.
