Here is the thing: to use the term "minister" one assumes that they are ordained but it is true that ministers can be licensed with out being ordained under some Christian organizations.  Here is the law in Texas as to who can perform marriages legally:

Ordained Christian ministers and priests; Jewish rabbis and persons who are officers of religious organizations and who are duly authorized by the organization to conduct marriage ceremonies may perform marriages. Ministers must complete the marriage license and return it to the county clerk who issued it within 30 days after the marriage. 

I think that you would in fact be covered but I might check on it with the licensing bureau.  Good luck.
