I currently have an E-2 Visa with my business and my role is coming to an end,
and was enquiring as to how easy a process it is to convert this into a regular
immigration visa, as a UK citizen, to apply for work with other US companies.

There is really no conversion process if you want to work with other US companies. A US employer would have to sponsor you for a work visa and parallel to that petition you for an employment-based permanent residence process.
