If it states in my lease that all civil action will be taken up in one county, is it legal for my landlord to go to another county to try to evict/sue me?

It is not a question of your landlord doing anything illegal or legal per se by filing an eviction proceeding in a county other than what was contractually agreed to as from what you have written. Rather you should object to the venue of the county by way of a filed pleading stating that the lawsuit involving you should be moved to the county stated in your written lease.
