If I was scammed and lost my employer money, do I have to pay that amount to my employer?
I was scammed while at work at a convenience store to the tune of 500. There was no training or warnings prior to me being scammed. Now the employer is threatening to take me to small claims court to get their money back. Is this legal?

If you were negligent, or unreasonably careless, in falling victim to the scam (if a reasonable person would not have fallen victim, then you were negligent in losing the money), then you would be liable for it. If your employer believes you were at fault and you do not voluntarily repay, the employer could sue you and then a court will decide if you were at fault and have to pay.
