If I was arrested but the officer wrote my court date as 11 months prior, will I still be held liable for that ticket?

Yes, you will still be liable for the ticket... most courts will simply reform it and pull you back on a reset or new court date.  Make sure you file an answer or make an appearance so that you don't run the first of warrant being issued for your arrest for failing to comply with the court's appearance requirements.
