What to do if I was recently cited for doing 40 mph in a 25 mph, should fight this ticket in court, as I have been driving for 12 years and never had a violation?
I drove the same road moments later and back down again to see only one diamond orange sign that says “Road Work Ahead”. There are no signs indicating the speed limit or a reduced speed limit dues to roadwork.

You should try to negotiate or settle the matter in court, not fight it per se. It is not a defense to a speeding ticket that you did not see a speed limit sign, so you are unlikely to win outright; but if you go to court with a clean driving record, calmly explain what happened, and express contrition, it is very likely that the prosecutor will offer you a deal for fewer points on your license, or possibly even a fine-only (no points) deal.
