You don't appear to have any.  Once someone resigns, their job status and benefits would be terminated immediately (and this is true no matter how soon after that they changed your mind).  Absent some sort of company policy to the contrary or an employment/union contract or the like that would govern such a specific situation, I'm afraid that you have no legal recourse.
