What can I do if I live in a townhouse and my neighboor had 3 video cameras aimed at my back/front doors, patio and shed?

I have asked for them to come down but she said that she’s not moving them. I feel as though I have no privacy.

You can sue your neighbor for invasion of privacy.  Invasion of privacy is a serious interference with your right to be let alone and protected from unwarranted and undesired intrusions.

Your damages (the amount of monetary compensation you are seeking in your lawsuit for invasion of privacy) would include compensation for the act of invasion of privacy (general damages) and mental distress and if applicable physical illness  and harm to your social or business interests.  You can also recover punitive damages (a substantial amount to punish your neighbor if you can prove a wrongful motive).
