What should I do if I had a sexual harassment encounter due to a co-worker of mine grabbing my breast and my employer was told but did nothing?

An assistant manager spoke to the guy. I feel like more should be done.

If the incident is not repeated and there is no retaliation against you or further harassment, there is nothing you can do. Your employer's obligation is to take reasonable action on report of sexual harassment--they are not required to fire, demote, suspend, etc. the harasser, just to do what seema reasonable to prevent further harassment. If talking to him does the job, your employer discharged its responsibility.
