If I take a 6 month employment contract with no benefits while I wait to hear about a salary position, can I quit before the end of the 6 month period?
I believe that I can because employment in my state is “at will” employment state.

The fact is that at will employment is the norm unless a union agreement or employment contract provides otherwise. Consequently, the terms of your contract will control. Therefore, you will need to review it in order to find out when and why you may terminate your employment early. It will also list what, if any, penalties may be involved.
