Does the 72 hour contract law apply to buying a vehicle from a dealership?
I signed the contract Monday eve and have decided I’d like to save $2000 by eliminating the warranty and GAP insurance. I’ve called the dealership and they said the only changes are at the time of signing.

Unfortunately for you there appears to be no "cooling off" period regarding the purchase of a vehicle from an auto dealership like there is for a loan to buy real property or refinance real property.
Since you want the vehicle but do not want the extended warranty and GAP insurance, I suggest that you meet with the dealership's manager to see what accomodations can be given you. Usually GAP insurance is obtained through one's own auto insurance carrier and is added on as an additional item of coverage.
Possibly the dealership's manager may assist you in your request since you are willing to go through with the purchase of the vehicle.
