Who do I sue if a client came in to rent linens for their wedding and the bill was made out to the bride’s maiden namw and the groom paid the deposit with his check but they did not pay the final bill?

Do I sue her in her maiden name, in her married name, him, or both?

You would sue her, if she was  the one who signed or otherwise entered into the agreement to rent the linens; you can only sue the person who contracted for them, and not someone else who happened to pay on her behalf.

You should sue under  both names: e.g. "Jane Doe, a/k/a Jane Smith." That will cover your bases.
