An employer does not have to respect a worker's day off. Accordingly, it may make employees work on them, which includes calling and/or texting. If the employee is hourly, they need to be paid for all work done, including time spent talking to their boss or reading/responding to the boss's texts and emails. If the worker is non-exempt and such work puts them into aOT, they are entitled to be paid at that rate.
