Can they make me plea without representation or will they assign me some after I get bailed out?

I was arrested for theft and posses of card that was given to us by the owner of the card to use.

They can't make you plea ever--with or without representation. You have to choose to plead.
You have the right to ask for an attorney to be assigned to you (e.g. a public defender) but have to qualify for it (e.g. have a low-enough income and few-enough assets); if you don't qualify, you have to hire/pay for your own attorney. Ask the court to be assigned a lawyer and see if you qualify for one.
