No, she cannot change HIS will--no person may change another person's will. She may of course change her own will, so that if, for example, he has already passed away, if the way his will was written, the house became hers entirely (i.e. he did not give her only a life estate, or right to live there during her life, while you at the time of his death received the right to the home after her death), then she could leave the house to whomever she wants after her own death--his wishes do not bind her, unless he structured his will the right way.
