I work for an afterschool program in
which is only monday thru friday a
couple of my staf got writen up for not
attending a meeting on saturday which
they’ve missed before without being
written up one couldnt attend do
religious beliefs and others do to
their second job and myself do to
having to do my dialysis that morning

Yes, unless you have a written employment contract or union contract limiting or specifying your hours, your employer may make a Saturday meeting mandatory. They do have to accommodate employees for religious reasons or due to a medical condition (like having a kidney problem), so you and your the fellow with religous beliefs should not be written up. However, they do not need to accommodate a second job, so they could write up that person for missing the meeting.
