Type 1 diabetic requesting not to work a swing shift and to
have a set schedule.

The issue is whether the accommodation is reasonable. If the employer does not currently have an open "regular" shift to give you, the request is likely not reasonable, because it would be too expensive or disruptive: they do not need to add a new shift for you, and they are not required to "bump" anothet employee for you.
