Business started account in my name

A lawn service opened an account in my name
claiming my girlfriend directed them to treat my
property. They never contacted or received
consent from me. 8 months later I received a
bill statement for 320 with a threat to take me
to small claims court.

Assuming that a day or so of your time is worth less than the $320, refuse to pay and let them sue you and take you to court: in court, they would have to prove that you authorized the work/account. If they can't do that, they will not win the case. Note that if your girlfriend did in fact direct them to do the work or open the account, she would be liable for the charge and they sue her for the money.
