If I ate 2/3 of a molded sandwich from a restaurant and it caused me to be sick all day, what are my rights?

The company’s insurance carrier is offering $1500 to settle. Should I take that?

Personal injury settlements are based  on what your damages are.  Damages consist of medical bills, medication, lost wages, pain and suffering.  I can't tell from your question, but I am assuming you sought no medical treatment and recovered in a day.  As such, your damages are very low, even though you were sick for a day.  I think the fact that the insurance company is willing to make you any type of settlement offer is good for you and I wouldn't expect to be able to negotiate much more than what you have been offered.
