Age of Consent in Idaho.
My girlfriend and I met when I was 16. I was a junior and she was a freshman. There is 2 years and 6 months between us. The age of consent in Idaho is 18. However, if they are over the age of 16 and the offender is less than 3 years older it is not rape. I’m nearing 20 while she is 17. However, on paper I’m only 2 years and 6 months older, so would I be fine?

You seem to have worked out the age specifics of the statute here but may I make a suggestion? Hold off a little longer until she is 18. You are considered an adult and she is still considered a minor. While it may not technially be "rape" it is possible that you could be charged with another type of sexual offense that could result with you having to be listed in the Sexual Offender registry if convicted.
