If I am in USA as F1 student, and my I-130 has been applied in 2005 by my
grandfather, is it possible to file for adjustment of status? Or is there any
possible way to speed the process?

You are only eligible to apply for adjustment of status when the priority date is current. Depending on what preference category it was filed under and the current processing times for that category as well as your country of birth, you may be able to do so or not. You need to check the visa bulletin which is published monthly by the US Department of State.
